Ricotta and Pomegranate Balls

The ricotta and pomegranate balls are a quick idea (apart from the time resting in the fridge) to present a colorful and tasty appetizer for the fall-winter period when the fruit is harvested.

I used ricotta mixed with Grana cheese but we could use robiola and also mascarpone, or even better, a mix of these foods!

If you don’t like pomegranate, you can cover the mixed cheese balls with chopped nuts; hazelnuts or pistachios are ideal!

P.S. IT’S BETTER TO USE THE DRIEST RICOTTA POSSIBLE!

INGREDIENTS

  • 1 cup ricotta (or robiola or a mix of them)
  • 2 oz Grated Grana Padano
  • 3 pinches salt
  • 1 pinch pepper
  • 1 pomegranate

FOR THE PREPARATION OF THE RICOTTA AND POMEGRANATE BALLS RECIPE

  • Checking the ricotta, if it is very watery, I let it drain for an hour in a fine-mesh sieve.
    After the rest time, I put the ricotta in a bowl and work it with a fork or a soft spatula to make it smooth and well homogeneous.

    I add the grated Grana cheese then adjust with salt and pepper.

  • I mix very well and make many little balls, which I then leave in the fridge to firm up.

    In the meantime, with a nice pair of gloves, I extract the pomegranate seeds, the pomegranate arils, and leave them on kitchen paper to make them less moist so they adhere better to the mixed cheese balls.

    Once the ricotta balls have firmed up, I cover them with pomegranate arils then leave them in the fridge until ready to serve!:
