I love ricotta: just a pinch of salt and it becomes a pleasant ingredient to pair with vegetables and/or salad for a complete meal! On the blog there are many sweet and savory recipes I have made and today with this new ricotta cake with walnuts and chocolate chips I baked this rich and creamy dessert, very enjoyable to taste.

TIPS
Ricotta is not a cheese but a dairy product produced, therefore, not with rennet but with the whey left over from cheese production. It is a very versatile product as already mentioned and used for all courses of the menu; it is a appreciated source of proteins and minerals including calcium.
RICOTTA IS a low-calorie product and easily digestible, suitable also for children’s diets!

RICOTTA CAKE

Ingredients
- 2 cups ricotta
- 1 1/2 cups walnut kernels
- 1/3 cup all-purpose flour
- 3/4 cup sugar
- 3/4 cup dark chocolate chips
- 1 egg

Preparation
Beat the egg with the sugar.
Then add the fresh ricotta passed through a sieve and, when the mixture is well combined, add the sifted flour.
Now add the chopped WALNUTS and the chocolate chips.
When the mixture is homogeneous, pour it into a previously buttered and floured pan (about 8–8.7 inches diameter).
Bake the ricotta cake with walnuts and chocolate in a preheated oven at 338°F for about 45/50 minutes or depending on the characteristics of your oven. Simple and flavorful — enjoy your ricotta cake!
