Meatballs are a classic preparation usually made with meat but also excellent with vegetables, white fish, and much more, tastier if accompanied by a creamy sauce that binds and flavors them, making the dish even more appetizing.
The easy ricotta meatballs in sauce can be a great appetizer or a tasty main course!
These tender balls of ricotta, bread, and herbs I cooked in the oven to avoid too much fat and then let them absorb the flavor in the tomato sauce scented with fresh basil.

INGREDIENTS FOR RICOTTA MEATBALLS IN SAUCE
- 17.6 oz cow's milk ricotta
- 6 oz stale bread (soaked and squeezed)
- 3 cups Tomato sauce
- 2 cloves garlic
- 1 bunch basil
- 2 tbsp grated Parmesan (2 or 3 tablespoons)
- 1 egg
- as needed Extra virgin olive oil
- as needed breadcrumbs (if needed, optional)
- as needed salt and pepper

PREPARATION FOR RICOTTA MEATBALLS IN SAUCE
In a bowl, mix the ricotta with the soaked and squeezed bread, the egg, chopped basil, and Parmesan. Season with salt and pepper.
If needed, add some breadcrumbs to have a firm mixture with which we will form chubby meatballs!
Line the baking sheet with parchment paper and place the ricotta meatballs on it, adding a little olive oil and moving them around so they are evenly flavored.
Bake in a preheated oven at 375°F for about 15 minutes, so the soft and quick meatballs are perfectly golden.
Meanwhile, put a little extra virgin olive oil and garlic in a pan, and as soon as it is browned, remove it and pour in the tomato sauce, lowering the heat to a minimum.
Also, break some basil leaves, adding them to the tomato sauce, season with salt and pepper, and continue cooking for about ten minutes.
Now take the meatballs cooked in the oven and add them to the sauce, continuing to cook for another 10/15 minutes.
Once these ricotta bites in sauce are cooked, serve your guests’ plates, placing some basil leaves on top before serving at the table.
