Ingredients for RIGATONI WITH SWISS CHARD, PUMPKIN, AND SAUSAGE
- 10.5 oz rigatoni
- 17.5 oz cooked pumpkin
- 3.5 oz swiss chard
- 4.25 oz sausage (salamella, coiled…)
- 1 onion (finely chopped)
- 1 glass dry white wine
- to taste sage
- to taste grated Parmesan
- to taste extra virgin olive oil
- to taste salt and pepper

Preparation for RIGATONI WITH SWISS CHARD, PUMPKIN, AND SAUSAGE
Chop the onion finely and sauté it in a pan with a little extra virgin olive oil. Add the sausage without the casing and crumble it with your fingers. Brown it for a few minutes and pour in the dry white wine, letting the alcohol evaporate completely.
Cut the already cooked pumpkin into chunks and add it to the onion and sausage sauce.
Remove the stems from the swiss chard leaves and boil them together with the pasta in salted boiling water.
Drain the pasta al dente and add it to the pan with the sausage and pumpkin.
Season with salt and pepper, add some sage leaves, grated cheese, and make a final round of extra virgin olive oil, blending the flavors of the recipe for rigatoni with swiss chard, pumpkin, and sausage!
Serve this rich main course with simple rustic and very tasty foods!

Tips and notes
The pumpkin is a low-calorie food (100 grams provide only 18 calories) and contains vitamins A, C, and minerals. It is rich in antioxidants and has laxative properties; it is excellent as a steamed or baked side dish and also as a creamy main course perfect for the winter chills.
