- 11.3 oz spaghetti
- 14 oz tomatoes (firm and ripe)
- 7.1 oz anchovies
- 1 tbsp salted capers
- 1 clove garlic
- to taste extra virgin olive oil
- to taste chopped parsley
- to taste salt
- to taste pepper

FOR THE PREPARATION OF RICETTA SPAGHETTI ALLA RIVIERESCA
Remove the head, tail, and internal bone, then rinse the anchovy fillets under a gentle stream of running water.
Then place them on a sheet of paper towels and pat them to remove excess water.
Next, chop the blue fish fillets with the capers, parsley, and peeled fresh garlic clove.
Also, separately chop the fresh ripe tomatoes into small pieces.
A nice swirl of extra virgin oil in a wok or a large pan, and as it sizzles, add the chopped anchovies, capers, and parsley.
After a couple of minutes, add the chopped ripe tomatoes, adjusting the salt and pepper for the rivieresca spaghetti seasoning.
Meanwhile, in a high-edge pan, boil the pasta, the spaghetti, I prefer No.5 or 7, but linguine or bucatini will also do based on personal preference.
Drain the pasta al dente directly into the pan of sauce, adding a ladle of cooking water to blend the pasta well.
