Rustic cookies with Vin Santo and chocolate without butter and eggs...the recipe is from my super friend, confidant, almost like a mom, Paola, who makes them for her family and especially for her granddaughter Lucia!
It’s a quick preparation in the sense that the ingredients are put together and mixed without particular attention and then placed in small mounds on the baking sheet lined with parchment paper and off to the oven for baking!
You get quite a few with these quantities, but they keep for a few days if you can resist devouring them, so let’s proceed to bake these egg-free, butter-free, and delicious cookies!!

Ingredients RUSTIC COOKIES WITH VIN SANTO AND CHOCOLATE WITHOUT BUTTER AND EGGS
- 4 cups All-purpose flour
- 1 cup Sugar
- 2/3 cup Corn oil
- 6.8 oz Vin Santo (for me Tanit from Pantelleria)
- 7 oz Chocolate chips (or the same amount of chopped dark chocolate)
- 1 packet Baking powder
Preparation
The recipe is very simple … Put all the ingredients in a nice big bowl and mix well; the dough will still be rustic and not smooth and homogeneous.
Line a baking tray with parchment paper, then place several mounds of cookies with Vin Santo and chocolate without butter and eggs at a reasonable distance from each other.
Then all that’s left is to bake in a preheated oven at 350°F for the time necessary for the cookies with Vin Santo and chocolate to become nicely golden.
Let them cool and then they are ready for breakfast and/or a snack!
The alcohol part of the Vin Santo evaporates during baking, leaving a delicious and pleasant aroma…
