Remove the casing from the sausage and crumble it with a fork in a bowl.
Cut the chosen cheese into small cubes.
In a large bowl, crack the eggs, add a pinch of salt and pepper and mix well with a whisk until you get a homogeneous mixture.
Add the raw crumbled sausage, the chosen cheese cubes, the flour, and the grated cheese.Mix well with a spoon or spatula until you get a well-blended mixture
Line a 8-inch loaf pan (or a rectangular pan 8.5×6.3 inches) with parchment paper and grease it with a little Evo oil.
Pour the mixture and level it with a spatula.Bake in a static oven at 392°F for about 25-30 minutes, until the surface is well browned and set at the center of the pan.
Once cooked, let it cool completely before unmolding.
