The rustic savory pie featured in today’s recipe is what I quickly prepared today for my lunch!
I always have a package of ready-rolled puff pastry in the fridge, and after glancing at the kitchen, I thought of preparing a layered savory tart very quickly with what I had ready on hand!
I didn’t weigh the ingredients; I eyeballed it, so you won’t find gram measurements for anything, sorry!
This layered pie is not only super quick but also versatile. You can add or remove what you like or dislike, and in 30 minutes, you’ll have a melty and appetizing savory tart that can be an appetizer or, in larger sizes, a dish that just needs a mixed salad to complete it.
Below the photos and the complete recipe, I’ll leave you some of my ideas to make this rustic savory pie even richer!

RUSTIC SAVORY PIE INGREDIENTS
- 1 package puff pastry (rectangular)
- 2 tomatoes
- 8 slices sliced cheese (for me maasdam)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons grated Grana Padano
- to taste salt
- to taste basil
- 1 potato

Steps
1) Very quickly, I turn on the oven to 392°F (200°C) and unroll the ready rectangular puff pastry sheet onto a surface.
2) The recipe is super quick, so I make a little border around the entire perimeter of the ready puff pastry with my fingers to contain or at least try to contain the filling.
3) With a fork, I make many little holes on the base of the savory tart and then arrange the slices of washed potato with skin, cut using the mandoline, in a fairly orderly manner.
4) Then I add the slices of melty cheese
the ripe and firm tomato, also sliced, and some fresh basil torn with fingers, seasoning the filling of the rustic savory puff pastry tart with extra virgin olive oil and salt.
5) At this point, I just need to bake it for 15/20 minutes at 392°F (200°C), then raise the temperature to 428°F (220°C) for the last few minutes, but keep an eye on it, because my oven is a bit erratic lately and indeed in September … new kitchen!!!!!!!1
6) Once cooked, I take the CHEESY AND TASTY PIE WITH POTATOES CHEESE AND TOMATOES out of the oven and sprinkle the surface with grated Grana cheese.
7) Let it cool down, and … it will disappear in a second. The PUFF PASTRY SAVORY TART is super easy and delicious!

Here we can really add many ingredients, and I would start with Genoese pesto, sun-dried tomatoes in oil, other types of melty sliced cheese like classic or smoked scamorza, provola, and even Emmental if you like!
