Salmon with Kiwi Mayonnaise

The salmon with kiwi mayonnaise is a simple and tasty fish main course.

The salmon is simply cooked in a fragrant court-bouillon of water, wine, parsley, bay leaf, carrot, onion, and peppercorns and accompanied by a creamy mayonnaise made with kiwi.

I thought of cooking the fish in a very simple and low-calorie way to compensate for the richer mayonnaise, but if you prefer, you can prepare the salmon fillets in the oven or in a pan with little added fat…

Salmon with Kiwi Mayonnaise

Ingredients RECIPE SALMON WITH KIWI MAYONNAISE

  • 2 slices salmon (2/3 slices to taste)
  • 1 carrot
  • 1 onion
  • 1 leaf bay leaf
  • 1 sprig parsley
  • 3 peppercorns (3/4 to your taste)
  • 1 glass dry white wine
  • 2 kiwi (ripe)
  • 2 leaves basil
  • as needed Extra virgin olive oil (almost half a glass)
  • as needed fine and coarse salt

FOR THE PREPARATION OF THE SALMON WITH KIWI MAYONNAISE RECIPE

  • FOR THE COURT-BOUILLON Peel the carrot and cut it into pieces. Peel the onion and cut it into wedges.

  • Put a saucepan with about one liter of water on the heat, to which you will add the carrot pieces, onion wedges, bay leaf, black peppercorns, parsley sprig, dry white wine, and 2/3 pinches of coarse salt.

    At boiling, lower the heat and let it simmer for about 30 minutes.

  • FOR COOKING THE SALMON Take the skinned salmon fillets/slices and place them in a pan (if you have one, in a fish kettle), pour the cold court-bouillon over them and slowly bring it almost to a boil.

  • Keep the water at this temperature and continue for about 20 minutes. Turn off the heat and let the salmon cool in the liquid.

  • FOR THE KIWI MAYONNAISE Meanwhile, prepare the kiwi mayonnaise by placing the peeled kiwi slices in the immersion blender cup.

    Add the basil and about half a glass of e.v.o oil.

  • Blend everything with the mixer, trying to incorporate air to make the mayonnaise nice and frothy.

    Adjust the salt.

  • Compose the dish by serving the salmon with kiwi mayonnaise with some crunchy fennel rings.
