Sandwich Cake

Today’s recipe is the sandwich cake, a famous preparation of Swedish origin (smörgåstårta, literally “sandwich cake”).

This preparation, also common in Estonia and Finland, has many variants because there are numerous fillings that can be used, and even the final decoration is left to the cook’s creativity.
Traditionally, black rye bread is used, but I used the more common crustless white sandwich bread and included whatever I fancied and had on hand, such as a TUNA MOUSSE, slices of roasted chicken with a little mayonnaise, creamy cheese with slices of tomato, grilled zucchini with robiola, ricotta mousse and mortadella.

I covered the entire sandwich cake with creamy cheese and decorated with boiled eggs, julienned carrots, slices of Hungarian SALAMI, a tiny bit of mayonnaise, and capers, yellow cherry tomatoes, and fennel leaves.

TIP FOR PREVENTING BOILED EGGS FROM CRACKING…add 1 tablespoon of vinegar to the boiling water!

INGREDIENTS FOR SANDWICH CAKE RECIPE

RICOTTA AND MORTADELLA MOUSSE

  • 5.3 oz mortadella
  • 5.3 oz ricotta
  • to taste salt and pepper
  • 5 slices of sandwich bread
  • to taste mayonnaise
  • to taste creamy cheese
  • 3 boiled eggs
  • to taste cherry tomatoes
  • to taste ham mousse (see recipe above)
  • to taste grilled vegetables
  • to taste salami
  • to taste capers

FOR THE PREPARATION OF THE SANDWICH CAKE RECIPE

  • Place the ingredients for the ricotta and mortadella mousse in the mixer and operate the blades to obtain a homogeneous and creamy mixture.

  • Then add the slices of boiled eggs (calculate 8 minutes from boiling and place the eggs starting from cold water), with slices of ripe and firm tomato for example.

  • Creamy cheese is always a good base for preparing sauces for the filling, and we can flavor it in many ways (herbs, for example).

  • Then move on to the final covering by covering the entire rectangle of sandwich bread that composes this savory appetizer, very easy and tasty.

  • Adjust the saltiness and keep in the refrigerator until ready to be enjoyed, to stuff gastronomic panettone, sandwich cake or on crostini and bruschetta!

Advice and notes

If you prefer to make the sandwich cake with fish-based fillings, I suggest mixing pieces of boiled salmon with creamy cheese and chives.
