Today’s recipe is the sandwich cake, a famous Swedish preparation (smörgåstårta literally “sandwich cake”).
This preparation, also popular in Estonia and Finland, comes with many variations because there are lots of fillings you can use and even the final decoration is left to the creativity of the cook. Typically, black rye bread is used, but I opted for the more common crustless white sandwich bread and filled it with what I fancied and had on hand, including a TUNA MOUSSE, slices of roast chicken with a little mayonnaise, creamy cheese with tomato slices, grilled zucchini with robiola, ricotta mousse and mortadella.
I covered the entire sandwich cake with creamy cheese and decorated it with hard-boiled eggs, julienned carrots, slices of HUNGARIAN SALAMI, a bit of mayonnaise, and capers, yellow cherry tomatoes, and fennel leaves.
SECRET TIP TO PREVENT HARD-BOILED EGGS FROM CRACKING…add 1 tablespoon of vinegar to the boiling water!

RICOTTA AND MORTADELLA MOUSSE
- 5.3 oz mortadella
- 5.3 oz ricotta
- to taste salt and pepper
- 5 slices of sandwich bread
- to taste mayonnaise
- to taste creamy cheese
- 3 hard-boiled eggs
- to taste cherry tomatoes
- to taste ham mousse (see recipe above)
- to taste grilled vegetables
- to taste salami
- to taste capers

PREPARATION FOR THE RECIPE SANDWICH CAKE
Put the ricotta and mortadella mousse ingredients in the mixer and blend to obtain a smooth and creamy mixture.
Then add the slices of hard-boiled eggs (count 8 minutes from boiling and start with cold water), along with slices of ripe and firm tomatoes, for example.
The creamy cheese is always a good base for preparing sauces for the filling and can be flavored in many ways (aromatic herbs, for example).
Proceed to the final covering by coating the rectangle of sandwich bread slices that make up this savory appetizer, which is very easy and tasty.
Adjust the seasoning and keep in the fridge until ready to be served for filling gourmet sandwich cakes, sandwich cakes, or on crostini and bruschetta!

Advice and Notes
If you prefer to make the sandwich cake with fish-based fillings, I suggest mixing pieces of poached salmon with creamy cheese and chives.
