Today’s recipe is the sandwich cake (torta tramezzino – Sandwich cake), a famous preparation of Swedish origin (smörgåstårta, literally “sandwich cake”).
This preparation, also widespread in Estonia and Finland, has many variations because there are countless fillings you can use and the final decoration is up to the cook’s creativity. Traditionally rye “black bread” is used, but I used the more common crustless white sandwich bread and added what tempted me and what I had on hand: a TUNA MOUSSE, slices of roast chicken with a little mayonnaise, creamy cheese with tomato slices, grilled zucchini with robiola, ricotta mousse and mortadella.
I covered the entire sandwich cake with creamy cheese and decorated it with hard-boiled eggs, julienned carrots and slices of Hungarian SALAMI, a tiny dot of mayonnaise and capers, yellow datterini tomatoes and little fennel fronds.
TIP TO PREVENT HARD-BOILED EGGS FROM CRACKING: add 1 tablespoon of vinegar to the boiling water!

RECIPE INGREDIENTS FOR SANDWICH CAKE
RICOTTA AND MORTADELLA MOUSSE
- 5 oz mortadella
- 2/3 cup ricotta
- to taste salt and pepper
- 5 slices of crustless sandwich bread
- to taste mayonnaise
- to taste cream cheese
- 3 hard-boiled eggs
- to taste datterini tomatoes
- to taste ham mousse (see recipe above)
- to taste grilled vegetables
- to taste salami
- to taste capers

FOR THE PREPARATION OF THE SANDWICH CAKE RECIPE
Put the ingredients for the ricotta and mortadella mousse into the mixer and blend until you obtain a smooth and creamy mixture.
Then add the slices of hard-boiled eggs (cook for 8 minutes from the boil — start the eggs in cold water), along with slices of ripe, firm tomato, for example.
Cream cheese is always a good base for making sauces for the filling, and we can flavor it in many ways (for example with aromatic herbs).
Next, finish the cover by coating the entire rectangle made of sandwich bread slices that make up this savory appetizer, very easy and tasty.
Adjust the seasoning and keep refrigerated until serving to fill savory panettoni, sandwich cake or to spread on crostini and bruschetta!

Tips and notes
If you prefer to make the sandwich cake with fish-based fillings, I suggest combining pieces of poached salmon with cream cheese mixed with chives.
