FOR THE PREPARATION OF SANDY CHICKEN AND VEGETABLES
Cut the chicken breast into cubes, removing the white fat filaments and the Y-shaped bone called the wishbone.
This little bone was the protagonist of a game to predict the gender of a future birth we used to play at home with my mom.

In a bowl, I mix breadcrumbs, grated cheese, salt, pepper, dried oregano, and chopped garlic, mixing well to combine all the breading ingredients.
I then add the chicken cubes and try to season them to coat them well with this tasty mix.
I then cut the zucchini into rounds and the already boiled potatoes into pieces and add them to the bowl, always seasoning the food.
Line the baking pan with parchment paper and arrange the chicken and sandy vegetables, trying not to overlap them.
Pour or spray some extra virgin olive oil and bake, cooking for about 25 minutes at 375°F in static mode or according to the characteristics of your home oven.
