The Santiago Cake is a famous Spanish cake typical of Galicia. It is almond-based and very easy to make.
I found several recipes for this dessert: some with a shortcrust pastry base, others (like the one I made from a magazine) with a single batter that already incorporates the ground almonds! 
I also read that the Santiago Cake without flour was famous because it was offered to pilgrims during the Camino de Santiago, and what certified its originality was the drawing of the cross of Santiago de Compostela, a symbol of an ancient monastic-military order that arose in the 12th century.
The cross I made as a decoration for the almond cake of Santiago is not perfect, but the typical dessert of the Camino de SANTIAGO is extraordinarily good and gluten-free, also great for people with gluten intolerance!
Santiago de Compostela is one of the most important Christian cities to visit, the endpoint of the famous pilgrimage. Since 2006, the Santiago Cake has been recognized by the Spanish state as a Protected Geographical Indication (PGI) product and is available for purchase in every patisserie in the Spanish town.

Ingredients for NO BUTTER NO FLOUR SANTIAGO CAKE RECIPE
- 7 oz almonds (peeled)
- 6.3 oz sugar
- 4 eggs
- 1 pinch ground cinnamon
- to taste powdered sugar (for decoration)

FOR THE PREPARATION OF THE NO BUTTER NO FLOUR SANTIAGO CAKE
To prepare the flourless Santiago cake, first preheat the oven to 356°F.
In a bowl, beat 4 egg yolks with 3.2 oz of sugar and a pinch of cinnamon.
Then make another mixture by beating the remaining 4 egg whites and gradually adding the remaining 3.2 oz of sugar.
Grind 7 oz of peeled almonds in a mixer until powdered and add them to the egg yolk, sugar, and cinnamon mixture.
Perfectly blend this mixture and also add the beaten egg white mixture of the gluten-free Spanish cake of Santiago de Compostela, mixing slowly from bottom to top.
Line the pan (9-inch) with wet and squeezed parchment paper and pour the final mixture.
Now bake the easy Spanish cake with almonds without flour, letting it bake for 45 minutes or according to your oven’s characteristics.
Once cooled, decorate it, perhaps by preparing a kind of stencil in the shape of a cross with parchment paper for decoration … so you can have a cake similar to the original!
