The eggplants are a widely cultivated vegetable in Italy, so much that we have crops covering 30% of the national territory.
It is a low-calorie food, but it absorbs a lot during cooking, so the method is crucial for achieving a light dish (like this one) or a super-caloric one (like a large tray of fried eggplants for eggplant parmigiana)!
This is a very simple recipe for a not too caloric side dish and also as a base for other preparations like pasta dressings or savory pies or rich casseroles adding cooked ham, melting cheeses, etc. If you want a simple side dish, here are the sautéed grilled eggplants…

Sautéed Grilled Eggplants

Ingredients for SAUTÉED GRILLED EGGPLANTS RECIPE
- 4 eggplants
- 1 bunch parsley
- 2 cloves garlic
- to taste extra virgin olive oil
- to taste fine salt

Preparation for SAUTÉED GRILLED EGGPLANTS RECIPE
Wash and cut the eggplants lengthwise to a thickness of about 0.2 inches.
Place them in a colander and sprinkle with salt.
Place a weight on top and let the eggplants drain to remove bitterness.
After at least 30 minutes, quickly rinse the slices under running water.
Pat them dry with paper towels and grill them on a hot plate on both sides.
Wash and finely chop the parsley and cut the garlic into larger pieces.
Layer them in a baking dish adding garlic and parsley. Adjust salt and let the sautéed grilled eggplants sit in the refrigerator to soak up flavors.
