SAVORY CAKE with Cherry Tomatoes and Scamorza Cheese

I love cooking all sorts of things, and among my culinary passions are SAVORY PIES that allow me to experiment with various combinations and use any leftovers from other preparations.

The other day, I took advantage of an offer at Pam and found myself with some remnants of scamorza and mozzarella that I put in this rustic savory pie with cherry tomatoes and scamorza cheese.

You can also use other leftover cheese &hellip some tomini, some soft caciottina&hellip basically, whatever you have at home!

Savory Cake with Cherry Tomatoes and Scamorza Cheese

Ingredients for SAVORY CAKE WITH CHERRY TOMATOES AND SCAMORZA CHEESE

  • 1 3/4 cups all-purpose flour
  • 10 cherry tomatoes
  • 3 tablespoons vegetable oil (for me, corn oil)
  • 7 oz scamorza cheese
  • 3 medium eggs
  • 1/4 cup milk
  • 1 packet baking powder for savory pies (for me, Pizzaiolo)
  • 5 leaves basil
  • to taste salt and pepper

  • Stand Mixers
  • Spatulas
  • Loaf Pans

FOR THE PREPARATION OF THE SAVORY CAKE WITH CHERRY TOMATOES AND SCAMORZA CHEESE

  • First, wash the cherry tomatoes and after cutting them in half, place them in a pan with 2/3 tablespoons of extra virgin olive oil.

    Let them stew over medium heat for a few minutes, then adjust with salt and pepper.

  • Cut the scamorza or chosen melting cheeses, break the basil leaves, and add them to the stewed tomatoes.

    Toss the preparation and turn off the heat.

    In a bowl beat the eggs, then pour in the sifted flour with baking powder, milk, and 2/3 tablespoons of oil.

    Adjust the preparation with salt and pepper.

    Now add the cherry tomatoes, cheese cubes and basil leaves: mine are so small that they almost disappeared!

  • Oil and flour the loaf pan and pour in the mixture, leveling it well.

    Preheat the oven to 350°F and bake for about 40/45 minutes or depending on your appliance’s characteristics.

    Once baked, let it cool slightly and then serve at the table!
