The classic clever recipe as people often say on the web …even if it’s a term I don’t like at all but the savory hedgehog for appetizer is truly a lovely way to expand the savory appetizer buffet without too much effort and work but with a pretty and tasty result!!!
This very clever budget-friendly little recipe can be made in advance and kept well wrapped in plastic wrap in the refrigerator until serving time and in my opinion it’s perfect even for the New Year’s Eve dinner since we are in the holiday season!
The base is a small roll shaped like a turtle but you can also use half a cantaloupe hollowed of its flesh which can then be cut into cubes and paired with speck and prosciutto crudo.
You can also use stuffed green olives, oil-packed or pickled vegetables such as pearl onions, mushrooms and more — just make sure to pat them dry with paper towels so they don’t drip onto the other ingredients, please!
My small roll is small because my family is small, but you can of course use a larger bread, no need to say it, right??
I put what I had in the fridge and what came to mind while shopping today at the Pam on Via Bellaria.
I also thought it wouldn’t be bad to make this CREATIVE SAVORY AND GOURMET HEDGEHOG APPETIZER with fruit like raspberries, blackberries, small towers of blueberries, segments of clementine and orange, papaya and whatever you prefer… If you want to make a decadent and perhaps exotic fruit salad, before serving drizzle a few streaks of melted chocolate…
I leave you ONLY the ingredients I used, there’s really nothing to explain: just arm yourself with toothpicks and a bit of patience and voilà, the savory hedgehog for appetizer is ready!!!

- 2 whole cloves (hedgehog's eyes)
- as needed toothpicks
- as needed cherry mozzarella balls
- as needed slices of salami
- as needed cubes of Emmental cheese
- as needed datterini cherry tomatoes
- as needed white and pink grapes
- as needed party cocktail sausages (würstel)
- as needed surimi sticks
- as needed mortadella cut into cubes

Preparation SAVORY HEDGEHOG FOR APPETIZER
As mentioned above the savory hedgehog for appetizer is a clever recipe and there isn’t much to say about the procedure..
Wash the fruit and vegetables and dry them with paper towels.Cut the cheese and mortadella into cubes or triangles, fold the salami slices into quarters and make short pieces with the surimi.
Also pat dry the mozzarella balls to avoid the preserving liquid soaking and wetting the roll that serves as the base of the savory hedgehog for appetizer. Skewer everything and proceed to cover the entire curve of the stuffed hedgehog.
Bring to the table and enjoy a great buffet with the clever recipe of the savory hedgehog for appetizer!!
