Phyllo or phillo dough is an excellent substitute for puff pastry or brisée dough for making the containing shell of savory pies, which especially in summer free us from the thought of meals and give us an essential help in the kitchen.
Phyllo dough is very delicate and always needs a little oil while we layer the sheets, and it would also be advisable, once the package is opened, to protect it with a damp cloth to prevent it from drying out before the complete preparation of our recipe!
In the cheese filling cream, I added ricotta, grated cheese, and a mix that was in the fridge of gorgonzola and mascarpone, but we can also use just one type of cheese, or diversify with robiola, spreadable creamy cheese, or anything else to taste.

- 1 lb ricotta
- 2 oz grated Parmesan cheese
- 2 eggs
- 5 oz gorgonzola and mascarpone
- 11 oz cherry tomatoes
- 2 tbsp vegetable oil
- to taste salt

- to taste dried oregano
- to taste basil

FOR THE PREPARATION OF THE SAVORY PIE WITH PHYLLO, CHEESE, AND CHERRY TOMATOES
Pour a little vegetable oil into a glass and start by placing a sheet of phyllo in the mold, always oiling, and adding other phyllo sheets covering the entire size of the mold and making a layer with at least 4/5 sheets overlapping and joined together to create a base for the three-cheese savory pie.
In a bowl, put the ricotta, the grated cheese, the mix of gorgonzola and mascarpone, and carefully mix the cheese flavors together.
Add the eggs and mix the mixture well.
Pour this cheese cream onto the base of phyllo dough, level it well, then arrange the halved cherry tomatoes, washed, dried, and clearly cut in half, in a circular pattern according to your preference
Season with a drizzle of extra virgin olive oil, dried oregano crumbled between the fingers, and adjust the salt and pepper, randomly placing some fresh basil leaves.
Bake and let cook for 35/40 minutes, always checking the cooking degree of the phyllo, cheese, and cherry tomato savory pie!
