Savory Puff Pastry Strudel with Leeks, Speck, and Walnuts

I had some leftover leeks in the fridge and, with many errands to run throughout the day, I really didn’t feel like complicating my life with a thousand preparations. In these cases, I can only think of a savory pie or a savory puff pastry strudel, which for me are almost always the simplest and most effective solution to solve the family dinner problem.
With a few well-matched ingredients, you can bring something complete and satisfying to the table: just add a touch of Parmesan to give it character, a few slices of fresh fruit on the side, and the dish is done. One of those recipes that are born almost by chance but are gladly redone.

I really like leeks; they are gentler than their cousin onion and can add flavor without giving the dish a more pronounced taste!

Ingredients

  • 1 package puff pastry (rectangular)
  • 2 leeks
  • 3.5 oz Taleggio cheese
  • 1.75 oz walnut kernels
  • 1.75 oz speck (diced into strips)
  • 1 tablespoon honey
  • 1 egg
  • 1 tablespoon milk
  • as needed poppy seeds

Steps

  • Clean the leeks from the outer sheath, remove the root, and after washing, slice them thinly and sauté them with a dash of oil until soft.

    Then add the honey and caramelize for 1 minute.

  • Roll out the pastry keeping the baking paper, distribute in the center of the rectangle, leeks, broken walnut kernels, and Taleggio cheese chunks.

    Make cuts on the side of the filling and close it like a Danish braid or spread the filling leaving a couple of inches around the perimeter and roll it up as if it were a strudel.

  • Brush with the egg mixed with milk, add poppy seeds, and bake at 375°-390°F for 40/45 minutes or until fully cooked with golden and crispy puff pastry.

    Let it cool for about ten minutes and serve at the table.
