Savory Quiche with Spinach and Quail Eggs

I stopped by Esselunga this morning for my weekend grocery shopping and thought of making this savory quiche with spinach and quail eggs which I never find at the other supermarkets I usually shop at.

I used puff pastry that I always have in the fridge, but we can also use shortcrust pastry or brisée as we prefer!

HOW TO VARY THE INGREDIENTS?

If you don’t like spinach which we often just boil and season with a bit of lemon to help with calcium, we can use agretti that are now available at the market and stores!

As for the cheeses to create the cream that holds and enhances the flavor of the puff pastry, we can use not only robiola but also mascarpone, goat cheese, and even enhance with leftover semi-hard cheeses…in short, this flavorful quiche can be a great fridge cleaner idea!

HOW TO SERVE THE QUICHE WITH SPINACH?

A classic is to serve the slices arranged in a fan directly on the serving tray, perhaps a rustic wooden or bamboo board, adding maybe some edible flowers like primroses or daisies to complete the dish aesthetically!

With a sharp knife, we make many squares that we can then spear with those colored sticks, turning them into spring finger foods easy to take and taste, a delightful amuse-bouche!

I would opt for a sauce like LABNA, which is a bit thick but tasty yogurt-based sauce!

Ingredients

  • 1 package puff pastry (round or rectangular as preferred)
  • 1.75 oz spinach
  • 2 eggs
  • 4 quail eggs (optional)
  • 1.5 oz grated parmesan
  • 7 oz robiola
  • 1.75 oz mozzarella (julienned)
  • 0.5 cup milk
  • 5 oz ricotta (or mascarpone)
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF THE SAVORY QUICHE WITH SPINACH AND QUAIL EGGS

  • After opening the package of puff pastry I preheat the oven to 375°F and proceed to place the puff pastry with the provided paper in the mold, letting part of it rise on the edges of the pan.

  • In a bowl, I put the robiola, ricotta, eggs, milk, grated cheese, mixing everything well and seasoning with salt and pepper to flavor the filling cream for the savory pie.

  • I pour this creamy and savory sauce covering the puff pastry shell already placed in the pan.

    I add the julienned mozzarella and the washed and patted dry spinach leaves which I have broken into pieces with my fingers, very simply.

  • I now bake my quiche with spinach cooking it for about 25/30 minutes.

    Now is the right time to take out the pie and add the quail eggs, then continue cooking for another 15 minutes or so… If you don’t want to add them, just continue cooking until the savory puff pastry is completely golden.

  • When the edges of the pie are lifted, golden, and crispy and the filling is well-cooked but still creamy, I turn off the oven, let it cool perfectly, and then…
