Savory Roll with Salmon here’s the recipe prepared today. It is nothing more than the savory version of the biscuit dough or savory sponge cake dough more often used in its sweet version, for making desserts. I made a roll/appetizer filled with creamy cheese, ricotta, chives, and slices of smoked salmon.
HOW TO FILL THE ROLL OR SAVORY SPONGE CAKE ROLL?
Clearly, the filling can be varied in many ways, for example,
1) with the tuna mousse
2) or with mortadella
3) but also with salmon
4) with arugula and creamy cheese or as you prefer, but it will always be an excellent appetizer for any friendly and convivial gathering!

Ingredients for SAVORY ROLL WITH SALMON RECIPE
- 6 Eggs
- 3/4 cup Flour
- 1 tsp Sugar
- 4 g Salt
- 1 cup Cream cheese
- 2/3 cup Cow's milk ricotta
- 3.5 oz Smoked salmon
- to taste Chives
- to taste Salt and pepper

- Parchment Paper
- Bowl

Preparation for SAVORY ROLL WITH SALMON RECIPE
FOR THE PREPARATION OF THE SPONGE CAKE DOUGH RECIPE For the savory sponge cake dough whip the eggs with the sugar and salt for 10 minutes. Then add the sifted flour gradually, mixing with a flexible spatula with movements from bottom to top to prevent the mixture from deflating.
Pour the mixture into a tray about 12 x 16 inches lined with parchment paper and level the mixture. Bake at 350°F in a preheated oven for about 10 minutes or depending on your oven’s characteristics: the sponge cake should only be golden and not too dark!
Once baked, turn it over a clean, damp cloth. Remove the parchment paper and roll the sponge cake allowing it to cool wrapped in the cloth.
For the filling of the savory sponge cake mix the ricotta with the creamy cheese and a generous amount of chopped chives. Season with salt and pepper.
Unroll the sponge cake, distribute the slices of smoked salmon and then the creamy cheese mousse.
Roll up the sponge cake now filled, wrap the roll in aluminum foil and refrigerate until ready to serve.
With the leftover mousse, I decorated the top of the savory roll with dollops of cheese and chive stems, but of course, it’s just my way of doing it… Use your imagination for a thousand different possibilities. Enjoy with the savory sponge cake roll with salmon recipe!
