SEA BREAM EN PAPILLOTE with seafood

While shopping at Coop & Coop in San Ruffillo, I found a mega offer for sea bream, and since it had been a while since I made a nice big fish for dinner, here I am proposing this recipe for sea bream en papillote with seafood, which is an excellent and very tasty fish main course!

It is made even more flavorful with the presence of clams and mussels, and indeed, we ate it with gusto, especially Andrea, who already asked me to have double the amount of prawns next time…

Ingredients RECIPE SEA BREAM EN PAPILLOTE with seafood

  • 4 sea bream (about 14 oz each)
  • 300 g veracious clams
  • 400 g mussels
  • 16 prawn tails (cleaned)
  • 1 clove garlic
  • 300 g cherry tomatoes
  • 100 ml dry white wine
  • 1 shallot
  • to taste parsley and thyme
  • to taste salt and pepper

Preparation RECIPE SEA BREAM EN PAPILLOTE with seafood

  • Wash and clean the seafood

    and open them in a large skillet with garlic, wine, and chopped parsley.
    Then remove the shellfish from the shells and strain the resulting liquid, keeping it aside.

  • Mix the shellfish and mollusks in a bowl, adding the cherry tomatoes cut in half. Dry the sea bream, salt them inside and out, and stuff them with the fish and tomato mixture just made.

  • Place each filled fish on a sheet of parchment paper, add more fish mixture, and a tablespoon of saved mussel cooking stock.

    Then add olive oil, thyme, and chopped parsley.

  • Adjust the salt and pepper.

    Close the packets well and bake in a preheated oven at 375 °F for about 20/25 minutes or according to the characteristics of your oven: the sea bream eye will be white.

    Be careful not to overcook it, or it will become dry!

  • Turn off the oven and bring the sealed packets to the table, which will retain heat and flavor!
