  • 9 oz cherry tomatoes

Preparation of the Seasoned Potato Casserole Recipe

  • Wash the potatoes well, then boil them in salted boiling water for about 5 minutes.

    You can skip this step by extending the cooking time in the oven …

    Wash and then pat dry with paper the cherry tomatoes and cut them in half or quarters.

  • Cut the black olives in half.

    Slice the red onion into thin rings and the boiled or raw potatoes if you prefer to do a single, longer cooking.

    In a bowl, combine the slices of potatoes, onion, black olives, and cherry tomatoes.

  • Season everything with the basil broken with your fingers and dried oregano.

    Drizzle with extra virgin olive oil and season with salt and pepper.

  • Now take the baking pan and, taking about ten slices of seasoned potatoes at a time, arrange them over the entire surface of the pan.

  • Add more fresh basil leaves, a drizzle of extra virgin olive oil, and bake everything in a preheated oven at 356°F.

  • Bake for about 40 minutes or according to your oven’s characteristics.

    After the cooking time, let it cool slightly and serve…
