Semi-frozen Cake with Nougat and Panettone

A delicious and very simple dessert, this SEMI-FROZEN CAKE WITH NOUGAT AND PANETTONE, to be made in advance and enjoyed comfortably during the holiday lunches/dinners that will likely see families and friends gather to celebrate.

Instead of panettone we can also use pandoro or leftovers of other cakes: my only recommendation is to toast these large cake or bread crumbs in the oven to prevent them from becoming mushy when mixed with creams, whipped cream, and sweet fluid sauces, which would lose their texture and goodness.

Ingredients

  • 9 oz mascarpone
  • 1 cup whipping cream
  • 3 oz dark chocolate (coarsely chopped plus a few tablespoons of Nutella or other melted dark chocolate)
  • 1/3 glass alchermes
  • 2 oz nougat (chopped)
  • to taste panettone (in pieces)

Steps

  • Alright, alright… I beat the cream with the mascarpone using electric whisks or a stand mixer to get a soft and delicious cream.

  • I crumble a couple of panettone slices coarsely and toast them in the oven for a few minutes to make them nice and crunchy.

    (If the cream is too fluid, add more crumbled and toasted panettone from the oven grill)

  • Then I add a few tablespoons of alchermes diluted with running water to not make the diners too tipsy ahem ahem!

    I put these crunchy panettone crumbs in the cream and mix everything well.

  • I line a plumcake mold with cling film and pour the mixture, leveling it well on the surface and covering everything before placing this cold cake of panettone with cream and nougat in the freezer, taking it out at least 15 minutes before tasting it at the table!

    P.S. BEFORE SERVING, I put a few tablespoons of Nutella or melted chocolate in the pastry bag and draw some decorations that will freeze instantly, and we are ready to… enjoy it!
