SHORTBREAD TARTLETS with cream and blueberries

Shortbread tartlets with cream and blueberries are simple treats suitable for the whole family with a simple custard mixed with whipped cream… The shortcrust pastry of this recipe is made with seed oil but if you prefer, I leave you many super-tested recipes, including those of the famous Simili sisters… For the filling, you can use just custard or just whipped cream….

Ingredients SHORTBREAD TARTLETS WITH CREAM AND BLUEBERRIES

  • 10.5 oz All-purpose flour
  • 1 medium egg
  • 1 medium egg yolk
  • 3.2 oz Sugar
  • 0.42 cups seed oil (I use corn)
  • 1 teaspoon baking powder
  • 1 tablespoon Lemon zest (untreated)
  • as needed Fresh liquid cream

FOR THE PREPARATION OF THE SHORTBREAD TARTLETS WITH CREAM AND BLUEBERRIES

  • Place the flour in a bowl and then add the eggs, the seed oil, the baking powder, and the lemon zest as an aroma. Knead well, gradually incorporating the ingredients into the flour, then form a dough that you wrap in plastic wrap and let it rest for about 30 minutes in the refrigerator.

  • Prepare the custard following  this my recipe for a silky and quick microwave custard! 

    Let it cool with the plastic wrap in contact to prevent it from hardening and creating annoying lumps.

  • After the time has passed, roll out the shortcrust pastry with a rolling pin between two sheets of parchment paper. 

  • With a daisy-shaped cutter (about 3 inches) I created the shapes which I then placed over small baking cups which I then arranged on the baking sheet lined with parchment….paper ^_^!!

  • Bake in a preheated oven at 350°F for about 15 minutes or according to the characteristics of your appliance. 

  • Let them cool and fill them with custard (2/3) mixed with whipped cream (1/3) then decorate with fresh washed blueberries gently patted dry with kitchen paper.
