Shortcrust Pastry Bunnies for Easter, Easy and Quick Buffet Appetizer

The shortcrust pastry bunnies for Easter are a simple, quick and very cute snack to bring to the table during the holidays. They are easily prepared with one roll of shortcrust pastry and a bunny-shaped cutter, cutting out two shapes for each bunny: one whole and one with a small hole like a tail.
The two parts are baked separately in the oven until golden and crispy—keep an eye on the oven because shortcrust pastry browns very quickly!

Once cooled, place a small dollop of savory cream on the whole bunny, then place the shape with the hole on top: the filling will remain visible right in the tail hole, creating a cute and very showy effect.
For filling you can use chickpea hummus, tuna mousse, ricotta with chives, herbed cream cheese, olive pâté or robiola and smoked salmon.
They are perfect for Easter buffets, spring aperitifs or tasty starters, because they are easy to prepare and immediately make an impression on the table.

Ingredients

  • 1 roll shortcrust pastry
  • to taste hummus (chickpea)
  • to taste tuna mousse

Steps

  • Unroll the shortcrust pastry on a work surface.
    Using a bunny-shaped cutter, cut out many shapes remembering that for each bunny you need two pieces:
    – one whole
    – one with a small hole in the tail (I made it with a straw).

  • Arrange all the bunnies on a baking sheet lined with parchment paper.
    Bake in a conventional oven at 356°F for about 10-12 minutes, until they are lightly golden.

    PLEASE NOTE keep an eye on the oven because shortcrust pastry bakes quickly.
    Let cool completely.

  • Prepare the tuna mousse: blend tuna, cream cheese and lemon juice until you get a smooth cream.

    Prepare the hummus: blend chickpeas, tahini, oil, lemon juice and a pinch of salt until you get a smooth cream.

  • Place a small dollop of the filling cream on the whole bunny, then place the shape with the hole on top so that the filling will remain visible in the tail hole.
    Serve the shortcrust pastry bunnies as a starter or buffet snack for Easter.

    They disappear in a second and are super quick!
