The recipe for this shortcrust pastry without butter and eggs, hence vegan, is by Marco Bianchi, a famous scientific popularizer of the Veronesi Foundation who, in addition to this work, writes very interesting books, is the father of Vivienne, and has a blog where he cooks many special and delicious recipes.
It was here that I read this vegan pastry without eggs, milk, and butter, very interesting and great for those who follow this lifestyle and… for everyone else, including me!
Unlike Marco Bianchi, I used classic all-purpose flour that can be found in any supermarket, but I am including the original recipe with type 2 (semi-wholemeal) flour to allow you to follow in detail what Dr. Bianchi created..

Ingredients RECIPE SHORTCRUST PASTRY WITHOUT BUTTER AND EGGS
- 2 cups type 2 semi-wholemeal flour or all-purpose flour (I used all-purpose)
- 1/3 cup fine Muscovado sugar (I used superfine caster)
- 1/4 cup cold water
- 1/4 cup organic sunflower oil (I used corn)
- 1 teaspoon baking powder
- as needed Lemon zest

Preparation RECIPE SHORTCRUST PASTRY WITHOUT BUTTER AND EGGS
Mix the sugar in the water until completely dissolved.
Add the seed oil and the sifted flour with the baking powder, while continuing to mix everything.
Also add the grated lemon zest, then wrap the shortcrust pastry without butter and eggs in cling film and place it in the refrigerator to rest for about 30/40 minutes (Marco Bianchi says 60 minutes but I shortened the time!).
At this point, after resting, you have a dough to make a tart about 8 inches with small decorations on top or some cookies…
