SHRIMP AND ZUCCHINI SKEWERS

Ingredients RECIPE SHRIMP AND ZUCCHINI SKEWERS
- 24 shrimp
- 3 zucchini
- 4 slices prosciutto (or bacon)
- 4 tablespoons breadcrumbs
- to taste Parsley
- Extra virgin olive oil
- to taste salt and pepper

Preparation RECIPE SHRIMP AND ZUCCHINI SKEWERS
Clean the shrimp by removing the head and shell, legs, and intestinal vein by cutting them along the back.
Rinse them under running water and set aside.
Wash and trim the ends of the zucchini.
Use the mandoline or a knife to thinly slice them lengthwise.

In a bowl, mix breadcrumbs with finely chopped parsley. Line a baking sheet with parchment paper and proceed to assemble the shrimp and zucchini skewers.
Lay the zucchini slices on the work surface, then place a slice of prosciutto or bacon of the same height over them, sprinkle a little parsley breadcrumbs, and add a shrimp.
Wrap the crustacean in the seasoned zucchini by skewering the roll onto the skewer.
Continue until all ingredients are used, placing 4 shrimp per skewer.
Arrange the skewered crustaceans on the baking tray, sprinkle with the remaining breading, and season with salt.
Bake at 375/390°F for 4/5 minutes, then turn the skewers and cook for the same amount of time on the other side.
Serve immediately and enjoy this tasty and easy dish!

Tips and Notes
Obviously, if you use bacon, more slices than indicated for prosciutto will be needed, but that’s understandable ^_^ …
