How lovely is this simple Christmas brioche plumcake, soft and garnished with sugar crystals and candied cherries, right???
With this leavened dough, I tried out the new pyrolytic oven in my small but charming induction kitchen, and … I must say it turned out pretty darn good!

I used fresh brewer’s yeast for this delicate and fragrant SIMPLE CHRISTMAS BRIOCHE, but here’s a little reminder for converting between fresh and dry yeast
CONVERSION BETWEEN FRESH AND DRY BREWER’S YEAST
If you don’t have fresh brewer’s yeast but only have the dry dehydrated kind, remember that a 25-gram block corresponds to a 7-gram sachet, with a ratio of about 3:1, precisely 3.29. If you want the perfect formula to calculate the proportions, follow this little formula:
— if you want to convert the quantity of fresh brewer’s yeast to dry:
grams of fresh yeast indicated in the recipe’s ingredients : 3.29 = grams of dry yeast
–– if you want to convert the quantity of dry brewer’s yeast to fresh:
grams of fresh yeast indicated in the recipe’s ingredients x 3.29 = grams of dry yeast

- 3/4 cup Manitoba flour
- 1 cup all-purpose flour
- 1/4 cup sugar (not very sweet but then with jam ….or cream!)
- 1/2 oz fresh brewer's yeast
- 1 tbsp powdered sugar (heaping)
- 1/2 cup butter (soft butter)
- 1 egg yolk
- 3 eggs (plus more to brush before baking)
- 1 vial orange blossom water
- as needed candied fruit (I love cherries!)
- as needed sugar crystals

Place the eggs and yolk in the bowl of the stand mixer, followed by the sifted flours, the two sugars and the aroma of orange blossom water.
Now crumble the fresh brewer’s yeast and mix with the hook attachment for 10/15 minutes, kneading all the ingredients well to achieve a well-blended dough.
Then add the soft butter in pieces, incorporating it well into the dough.
Knead again for another 10/15 minutes until the dough is elastic and smooth.
Let rest for about 45 minutes covered with food wrap and away from drafts.
After the time has passed and the dough has doubled, proceed and knead it again and create … create|
Honestly, I wanted to make a super cool braid, but then this thing came out…
Anyway, cover and let rise for about 1 hour and 30 minutes, but keep an eye on it…
After about 60 minutes or a little more, we were already in this condition, and I thought I could bake, so…
Now the brioche is baked at 340°F in static mode for about 30 minutes, always keeping an eye on our home oven.
I must say I’m very satisfied … it’s soft, well leavened, very pleasant even with little sugar, but it’s better this way because we can add Nutellajam without too much worry!
