Skewed Filled Pastries with Cheese and Cranberries

The skewed filled pastries are a truly versatile appetizer: a very quick preparation, nice to look at and perfect when we need something simple yet impressive. They can be made in minutes, fit well on any holiday table, and can be served both as finger food and as a small entrée alongside other appetizers.
The great thing is that with the same base we can have fun creating different shapes: they can be made in the classic “skewed” version, but also transformed into a small braid, or made in the Danish style with alternate cuts.
If we want something even more practical, we can use muffin molds to obtain crispy baskets to fill as desired, or cut the puff pastry into small rectangles for single-serving snacks.
With the same dough, you can also make small closed, golden, and fragrant loaves to serve warm.

Ingredients

  • 1 package puff pastry (rectangular)
  • 7.76 oz brie (or camembert or gorgonzola)
  • 2/3 cup cranberries
  • 2 tablespoons orange juice
  • 1 egg yolk (to brush before baking)
  • to taste thyme (optional, lately I've been putting it everywhere😉)
  • to taste walnuts (chopped)
  • to taste sesame seeds (always before baking)
  • to taste salt

Steps


  • Place the cranberries in a small bowl and drizzle with orange juice and some fresh thyme leaves.
    Mix and let stand for a few minutes to soften and rehydrate.

  • Unroll the rectangular puff pastry sheet.
    Divide it in half and then again into many rectangles about 4-5 inches tall.
    On each rectangle:
    leave the right side whole → this is where the filling goes
    cut the left side with 5-6 oblique cuts, all oriented in the same direction
    (the classic “skewed” cuts).

  • Fill each rectangle by placing in the center of the whole part:
    slices or spoonfuls of brie (or camembert or mild gorgonzola)
    some marinated cranberries and chopped walnuts.

  • Close it skewed by lifting the left side, the one with the oblique cuts,
    and folding it over the filling in one motion.
    The cuts will open slightly during baking, creating the “skewed puff pastry” effect.
    Brush the surface with egg yolk (or milk if you prefer).
    Sprinkle with sesame seeds or poppy seeds according to personal choice.

  • Place each filled pocket with skewed cuts on parchment paper and proceed to bake in a preheated oven at 392°F (200°C) for 12-15 minutes or until the filled savory pastries are golden and puffed.

  • Once slightly warm, place them on the serving tray and serve!

    These appetizers with puff pastry are delicious warm and at room temperature!
