The skewed stuffed pastries are a really versatile appetizer : a very quick preparation, nice to look at, and perfect when we need something simple but impressive. They can be made in a few minutes, look great on any festive table, and can be served as finger food or as a small entrée alongside other appetizers.
The nice thing is that with the same base we can have fun creating different shapes: they can be prepared in the classic “skewed” version, but also transformed into a small braid, or made in the Danish style with alternate cuts.
If we want something even more practical, we can use muffin molds to make crispy baskets to fill as desired, or cut the pastry into small rectangles for individual snacks.
With the same dough, small closed, golden, and fragrant loaves can also be made, to be served warm.

Ingredients
- 1 pack puff pastry (rectangular)
- 7.8 oz brie (or camembert or gorgonzola)
- 2.8 oz cranberries
- 2 tablespoons orange juice
- 1 egg yolk (to brush before baking)
- as needed thyme (optional, I recently put it everywhere 😉)
- as needed walnut kernels (chopped)
- as needed sesame seeds (always before baking)
- as needed salt

Steps
Place the cranberries in a small bowl and drizzle with orange juice and a few sprigs of fresh thyme.
Mix and let rest a few minutes so that they soften and rehydrate.Unroll the rectangular puff pastry sheet.
Divide it in half and then again into many rectangles about 4-5 inches high.
On each rectangle:
leave the right side whole → this is where the filling goes
cut the left side with 5-6 diagonal cuts, all oriented in the same direction
(the classic “skewed” cuts).Stuff each rectangle by placing in the center of the whole part:
slices or spoonfuls of brie (or camembert or mild gorgonzola)
some marinated cranberries chopped into pieces, a few chopped walnut kernels.Close diagonally by lifting the left side, the one with the diagonal cuts,
and folding it over the filling in one movement.
The cuts will open slightly during baking, creating the “skewed pastry” effect.
Brush the surface with egg yolk (or milk if you prefer).
Sprinkle with sesame seeds or poppy seeds of your personal choice.Place each stuffed roll with diagonal cuts on baking paper and proceed to bake in a preheated oven at 392°F for 12-15 minutes or until the stuffed savory pastries are well golden and puffed.
Once slightly warm, place them on the serving tray and serve at the table!
These appetizers with puff pastry are good warm and at room temperature!
