- 2.8 oz smoked salmon
- 1.8 oz cream cheese
- 0.7 oz arugula
- 1 tbsp extra virgin olive oil
- 1 shallot
- to taste lemon juice

Quick and Appetizing First Course
In a pan, heat the EVO oil, add the peeled and chopped shallot, and let it soften.
Meanwhile, put the tall pot on the flame for cooking the pasta, which I’ll add to salted boiling water and drain al dente.
Once the shallot has softened in a few minutes, add the salmon pieces and leave just on the heat for a couple of minutes, stirring the sauce.
Add the cream cheese to the pan with a ladle of pasta cooking water and mix everything well.
Drain the pasta al dente, pouring it wet into the pan with the salmon and cream cheese sauce.
Turn off the flame, toss the pasta, also adding the arugula, washed, patted dry, and roughly torn with your fingers.
Final touches: a few pinches of black pepper and a splash of lemon juice, and the dish is ready to be served at the table.
