If you’re looking for an easy dessert full of fragrant, soft apples, don’t miss the recipe for the apple madeleine cake, a preparation that combines the sweetness of Golden apples with the delicate texture of the famous French madeleines!
The apple madeleine cake is excellent either at room temperature or warm, and if you want to make it more indulgent, serve it with a scoop of vanilla ice cream and sprinkled with powdered sugar mixed with cinnamon.
HOW TO VARY THE APPLE MADELEINE CAKE?
Here are some ideas to vary this fragrant preparation:
• we can make this cake lighter by using plain yogurt instead of butter;
• it will always be delicious by replacing Abate pears with golden apples, or using peaches if in season or apricots;
• if you like the aroma, cinnamon can be added to the main batter and not just sprinkled with powdered sugar before serving the apple madeleine dessert.
You can find the magic of Proust’s madeleine by tasting this cake filled with sweet apple cubes like the Golden variety, which you’ll love because:
• it tastes like home and a slightly buttery, moist, and soft family recipe;
• it doesn’t require special cooking skills;
• it splendidly accompanies a hot tea or coffee!
WHICH VARIETY OF APPLES IS RECOMMENDED?
I’m in love with the Golden apple, but I also recommend the Renetta or Fuji.
HOW MANY DAYS DOES THE APPLE MADELEINE CAKE KEEP?
Like other apple cakes, it stays soft for 2/3 days, ideally stored under a cake dome, but if you want, after slicing, you can freeze it! Just a few minutes in the microwave, and you can enjoy the apple madeleine cake as fresh and delicious as when just made!

- 1.1 lbs apples (for me, Golden)
- 1/2 cup brown sugar (light)
- 4 eggs
- 1 tablespoon wildflower honey
- 1 lemon (juice and zest to flavor the diced apples)
- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup butter (softened to a creamy consistency)
Tools
pan 9 inches
- Stand Mixers
- Oil Sprayers
- Baking Pans
A delicious recipe … shall we make it together?
I start the preparation by peeling the apples, removing the core and seeds, and then dicing them and drizzling with lemon juice and finely grated zest.
In a bowl, mix the light brown sugar with a generous tablespoon of wildflower or acacia honey, creating a creamy paste.
I also add the softened butter and mix the ingredients well with a hand whisk.
Then I add the eggs and incorporate them into the batter thoroughly and decisively.
I sift the flour with the baking powder and add them to the batter, mixing carefully to avoid lumps.
Finally, I fold in the Golden apple cubes and mix everything well.
I grease the selected 9-inch circular pan with the appropriate release spray or with butter and flour, and bake in a static oven at 350°F for about 40/45 minutes or according to the characteristics of our home oven.
Once cooking is complete, I turn off the oven, let it cool completely, then unmold the delicious apple madeleine cake, and after sprinkling it with powdered sugar, I jump right in to taste it…
Delicious, rich in apples, and delightful, the cake rich in apples with a madeleine-like batter!
Enjoy your meal! Annalisa
