Soft and Quick Alchermes Hearts

Soft and Quick Alchermes Hearts treats that seem leavened but are actually made with simple baking powder and they are not just good… they’re delicious!
I’ve shaped this easy dough into hearts using cookie cutters, but you can make donuts, circles, or anything you like…

Soft and Quick Alchermes Hearts

Ingredients for SOFT AND QUICK ALCHERMES HEARTS

  • 3 1/3 cups All-purpose flour
  • 3/4 cup Potato starch
  • 1 packet Baking powder
  • 2 Eggs (medium)
  • 1/2 cup Sugar (plus extra for coating)
  • 1/3 cup Butter (softened at room temperature)
  • 1 Lemon (preferably organic and only zest)
  • 1 1/2 pod Vanilla
  • as needed Milk
  • as needed Alchermes
  • as needed Seed oil (peanut oil is recommended as it has a higher smoke point)

FOR THE PREPARATION OF THE SOFT AND QUICK HEARTS RECIPE

  • Place the sifted powders (flour and potato starch) on the pastry board (or in a bowl) in a fountain shape.

    Add in the center the sugar, the slightly beaten eggs, about 2 tablespoons of milk, and the softened butter.

  • Add the grated lemon zest and the seeds from the vanilla pod.

    Mix to obtain a smooth and homogeneous dough.

    Cover with a clean tea towel and let it rest for about 20 minutes.

  • After the resting time, roll out the dough on a lightly floured pastry board with a thickness of about 1 cm.

  • From our evenly rolled dough, cut out the…soft hearts or any other shape you desire.

    Meanwhile, in a pan, heat a generous amount of seed oil and wait for it to reach the right temperature to start frying (about 340/355°F).

    To test the temperature, place a skewer at the bottom of the pan, and when many bubbles form around it, you can start frying the soft and quick Alchermes hearts.

    As they are ready, let the excess oil drain on kitchen paper and finish the dough.

  • Then pass the soft and quick hearts in Alchermes and then in sugar, and… here they are ready for a snack or as a dessert!
