The time to take about ten photos (at least) and already the sliced pieces of soft apple cake were starting to get a bit dark darn it…
Oh well, I’m sorry, but as always I take a lot of time to take lousy photos, but what can you do, I’m a better cook than a photographer* haha!!
Let’s get back to the recipe…this checkerboard cake with 5 apples in a 9.5 x 9.5 inches square pan is very easy, not complicated even if it requires quite a few ingredients because besides the apples I added some raisins on top, a jar of plain yogurt, and some sliced almonds inside, which are perfect for me crunchy in the tender and really full of Golden apples!
The apple cake
is for me a classic winter dessert but good in all seasons, which I love in all its versions and in the notes below I leave you other recipes that I think are super!
*To the trained eye the photo tends toward blue but I SWEAR I tried in every way to eliminate that darn blue but couldn’t do it!!

Ingredients for SOFT APPLE CAKE
- 5 Golden Apples
- 1/2 cup plain natural yogurt
- 1 packet baking powder for cakes
- 1 organic lemon (juice and zest)
- 1 tbsp raisins
- 3/4 cup sugar
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 3 medium eggs
- 1/4 cup butter
- 1/4 cup sliced almonds (broken into pieces)
- to taste powdered sugar

Preparation for SOFT APPLE CAKE
Peel 2 apples and cut them into not too large pieces, then place them in a bowl with the lemon juice (set aside the zest to be added to the soft apple cake batter). Melt the butter and let it cool.
In a bowl or stand mixer, place the eggs and beat them with the sugar (3/4 cup) until you have a soft, light and fluffy mixture.
Add the cooled butter then the sifted flour with baking powder and cornstarch.
Mix well, also adding the lemon zest, sliced almonds broken with your fingers, drained apples dried from the lemon juice, and the yogurt.
Mix the soft apple cake batter well and pour it into the greased and floured pan (square for me 9.5 x 9.5 inches).
On top, add the remaining peeled and cored apple slices, arranging them in a checkerboard pattern as in the photo.
Sprinkle the cake with raisins and bake the cake in a preheated oven at 350°F for about 40-45 minutes or according to the characteristics of your appliance.
When baking is complete, let it cool and unmold the soft apple cake, sprinkle with powdered sugar and serve at the table.
