SOFT BAKED MEATLESS MEATBALLS

Ingredients
- 10.5 oz potatoes (boiled)
- 7 oz ricotta
- 1 cup grated Parmesan cheese (or grated Grana Padano)
- 1 pinch nutmeg (optional)
- 4 leaves basil
- to taste salt
- to taste pepper
- to taste breadcrumbs (about 3/4 cup)

FOR THE PREPARATION OF THE RECIPE SOFT BAKED MEATLESS MEATBALLS
In a bowl, place the potatoes already boiled with or without skin according to your habits and taste.

Then I pass them through the potato ricer and add the ricotta and adjust the taste by adding salt and pepper and, if you like, a pinch of grated nutmeg.
With the palm of my hands, I make many meatballs which I then roll in the breadcrumbs and place on the baking pan lined with parchment paper.
Bake at 375°F for about 25 minutes or according to the characteristics of our home oven,
