- 4 eggs
- 10 tablespoons vegetable oil (for me corn oil)
- 10 tablespoons sugar
- 10 tablespoons milk
- 15 tablespoons all-purpose flour
- 1/2 packet baking powder
- 1 pinch salt
- 6 apples (for me Golden)
- 1 teaspoon ground cinnamon
- 1/2 lemon (juice only)
- 4 tablespoons sugar

FOR THE PREPARATION OF THE SOFT CAKE recipe rich in fruit and without a scale
I start by preparing the apples which, after washing, I peel, core, and cut into coarse pieces.
In a pan, I put the apples with the sugar, lemon juice, and cinnamon and over very low heat, I let them soften and flavor for about 5/6 minutes.
Once softened, I turn off the heat and proceed to make the cake batter.
I place the eggs and sugar in a bowl and whip them with the electric beaters to have them slightly foamy.
I then gradually add the vegetable oil, slowly adding it to the mixture of eggs and sugar.
I sift the flour with the baking powder and alternating with the milk, I add both to the previous mixture.
Pour half of the batter into the prepared pan with oil and flour or baking release spray and bake in a preheated oven at 340°F for 10-12 minutes.
After the time has passed, the soft cake rich in fruit and without a scale will have already risen during baking, but don’t worry, we take it out and evenly distribute the cooked apple mixture.
We always gently and evenly pour without leveling with a spatula the other part of the batter.
All that’s left is to put it back in the oven, the soft cake rich in fruit without a scale, and continue baking for another 20/25 minutes or so, always following the timings of our home ovens.
Once cooked, I let it cool, maybe on a cooling rack, and eat it!
Soft and homemade… really good!
