Soft Camilla Cake with Carrots and Almonds

It’s Sunday in Bologna, the sun is shining, and I’m enjoying my morning on the balcony. Breakfast is a fundamental moment, and all nutritionists recommend having it with healthy and energetic foods because it provides the necessary energy to the body and brain after a night’s sleep, recharging and restarting optimally thanks to the nutrients you consume.

Today, I prepared the recipe for the soft camilla cake with carrots and almonds, a well-leavened and soft cake great for breakfast in the morning and also delicious for an afternoon snack accompanied by a nice glass of FRUIT JUICE

Carrots are a vegetable that provides many benefits to our body because they are antioxidants, rich in vitamins and minerals, low in calories, and thanks to their high fiber content, they play a protective role on the digestive tract mucosa.

Ingredients for SOFT CAMILLA CAKE WITH CARROTS AND ALMONDS

  • 2 1/2 cups Flour
  • 1/3 cup Potato Starch
  • 2 Eggs
  • 3/4 cup Almonds (shelled and peeled)
  • 3/4 cup Sugar
  • 1/2 cup Milk
  • 7 tbsps Butter
  • 1 pack Baking Powder
  • as needed Powdered Sugar
  • 1 1/2 cups Carrots

Steps for SOFT CAMILLA CAKE WITH CARROTS AND ALMONDS

  • After cleaning and slicing them, boil or steam the carrots. Drain them and mash to obtain a sort of puree.

    Finely chop the ALMONDS with one tablespoon of sugar taken from the total amount indicated.

  • In a large bowl, place the sifted flour with the starch and baking powder.

    Then mix in the almonds with the remaining sugar, only the yolks, the softened butter, the carrot puree, and the milk. 

    Combine the two mixtures: the powders and the carrot one.

  • Now add the EGG WHITES beaten to stiff peaks gently mixing from bottom to top to avoid deflating them.

  • Pour the obtained mixture into a springform pan, greased and floured beforehand.

    Bake at 320°F for about 50/60 minutes or depending on your oven’s characteristics.

  • Let it cool, then remove from the oven and from the pan.

    Dust the soft camilla cake with CARROTS and ALMONDS and serve!
