Ingredients DELICATE AND SUPER SOFT LEMON RICOTTA CAKE RECIPE
- 6.3 oz Butter
- 3/4 cup Milk
- 2 1/3 cups All-purpose flour
- 9 oz Ricotta
- 7 oz Sugar
- 5 medium eggs
- 1 packet instant cake yeast
- 2 organic lemons (only grated zest)
- to taste Powdered sugar

- Whisk

For the fragrant lemon ricotta cake first whip the eggs with 150 grams of granulated sugar. In another bowl now whip to cream the butter with the ricotta and the remaining sugar.
Then flavor the ricotta mixture with the grated zest of the 2 lemons.
Now mix the two mixtures well with a flexible spatula using bottom-to-top movements.
Now sift the all-purpose flour over it alternating with the milk poured in a thin stream.
Pour the lemon ricotta cake batter into a previously buttered and floured mold of about 20 cm in diameter.
Then bake at 338°F (170°C) for about 50 minutes or depending on your appliance’s characteristics.
When done, and the toothpick test will always be the proof, take the cake out of the oven and unmold it onto a rack.
Now dust the delicate and super soft cake with powdered sugar and … enjoy your meal!
