RECIPE SOUP WITH PASTA AND POTATOES
In Bologna, the weather is quite variable: almost every day threatens rain and the first cold days have arrived.
The coming fall is the perfect season to set aside quick and cold first courses to enjoy soups and stews, warm brothy preparations which make excellent comfort food.
Today I prepared the recipe for a soup with pasta and potatoes enriched with bacon and a nice mince of fresh rosemary which gives an aromatic and distinct note that I personally love very much.
It is a simple dish and appetizing that replaces the more classic brothy first course like vegetable and legume minestrone… Needless to say, even my beloved and picky teenager liked it a lot so I invite you to follow me to prepare the soup with pasta and potatoes of the day….

Ingredients RECIPE SOUP WITH PASTA AND POTATOES
- 10.6 oz Potatoes
- 1 Fresh scallion
- 2.8 oz Bacon
- 2.8 oz ditalini
- 1 tomato
- l vegetable broth
- 2 sprigs rosemary
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

- Saucepan

Preparation RECIPE SOUP WITH PASTA AND POTATOES
Blanch the tomato in boiling water after scoring it with a cross on one side.
Once it is warm, remove the skin and inner seeds, then cut the flesh into strips or cubes and set aside.
Sauté the chopped scallion and bacon in a saucepan with a little extra virgin olive oil.
Add the peeled, washed, and diced potatoes for quicker cooking.
Add the tomato, season with salt and pepper, and continue cooking by gradually adding the necessary amount of hot vegetable broth.
After about 10/15 minutes add the pasta, stirring the preparation
Complete the cooking and turn off the heat.
Add a nice mince of rosemary and serve warm or hot at the table.
