RECIPE SOUP WITH PASTA AND POTATOES
In Bologna, the weather is quite variable: almost every day it threatens rain, and the first cold spells have arrived.
The approaching autumn is the perfect season to put aside quick and cold main courses in the kitchen to enjoy soups and potages, preparations to be served warm and slightly brothy, making them excellent comfort food.
Today I prepared the recipe for a soup with pasta and potatoes enriched with pancetta and a nice chop of fresh rosemary which gives an aromatic and decisive note that I personally love a lot.
It is a simple dish and tasty that replaces the more classic brothy first course like vegetable and legume minestrone… Needless to say, my beloved and picky teenager liked it a lot, so I invite you to follow me to prepare today’s soup with pasta and potatoes…

Ingredients RECIPE SOUP WITH PASTA AND POTATOES
- 10.5 oz Potatoes
- 1 Fresh spring onion
- 2.8 oz Pancetta (slab)
- 2.8 oz ditalini
- 1 tomato
- qt vegetable broth
- 2 sprigs rosemary
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Preparation RECIPE SOUP WITH PASTA AND POTATOES
Scald the tomato in boiling water after making a cross cut on one side.
When it’s warm, remove the skin and seeds inside, then cut the flesh into strips or cubes and set aside.
Sauté the chopped spring onion and pancetta in a casserole with a little extra virgin olive oil.
Add the peeled, washed, and small diced potatoes for quicker cooking.
Add the tomato, adjust salt and pepper, and continue cooking by gradually adding the necessary amount of boiling vegetable broth.
After about 10/15 minutes, add the pasta and stir the preparation.
Bring to a boil and turn off the heat.
Add a nice chop of rosemary and serve hot or warm at the table.
