Sour Cherries and Crumble Shortcrust

I have a passion for sour cherries… or rather, I have a passion for almost everything, but sour cherries definitely excite me, and even if I don’t eat them, I always have a little jar at home, and when I saw this recipe for a shortcrust and sour cherries dessert in the new Alice magazine, I immediately thought of preparing it and I must say that the result was highly appreciated by friends invited over for dinner with us.

The sour cherries and crumble shortcrust cake is easy and delicious, suitable for breakfast or a snack… always exquisite!!!

Sour Cherries and Crumble Shortcrust

Ingredients for SOUR CHERRIES AND CRUMBLE SHORTCRUST RECIPE

  • 2 cups Flour (+ for the pan)
  • 2/3 cup sugar
  • 1 tbsp baking powder
  • 1 pod vanilla
  • 2/3 cup Butter (+ for the pan)
  • 1 egg
  • 1 1/3 cups ricotta cheese
  • 2/3 cup Powdered sugar (+ for decoration)
  • 1/2 cup Syrup-preserved sour cherries
  • 1 egg white

Preparation for SOUR CHERRIES AND CRUMBLE SHORTCRUST RECIPE

  • Melt the butter over low heat in a small pan then let it cool.

    In a mixing bowl, place the flour, sugar, seeds from the vanilla pod, and baking powder.

  • Then add the beaten egg and mix the mixture well.

    Pour in the melted butter gradually and knead a little to get a “crumbly” mixture.

  • After greasing and flouring the pan, place the shortcrust crumbs along the edges and at the bottom, pressing lightly to compact the mixture slightly.

  • Sieve the ricotta into a bowl.

    Then add sugar and the egg white, mixing everything well.

    Carefully distribute the mixture into the pan.

  • Then place the sour cherries drained from the syrup.

    Now cover the surface of the sour cherries and crumble shortcrust cake with … the other shortcrust crumbs.

    Bake at 340°F for about 35 minutes or according to your oven’s characteristics.

  • Once cooked, let the cake with sour cherries and shortcrust cool and gently remove it from the pan.

  • Sprinkle the sour cherries and crumble shortcrust cake with powdered sugar and serve, perhaps with a nice dollop of whipped cream.
