SPELT TAGLIATELLE WITH RADICCHIO AND BACON

Today, after cooking sweet recipes with spelt flour, I prepared a pasta dish: spelt tagliatelle with radicchio and bacon, and it was a winning choice on all fronts!
Spelt is divided into small spelt or einkorn, medium spelt or emmer, and large spelt or spelt.
Spelt contains gluten and is therefore not suitable for people with celiac disease.
It is a plant easy to cultivate, suitable for organic farming as it requires no chemicals for cultivation.
Among the features of spelt, it’s cholesterol-free, aids intestinal function because it contains many fibers.
It has vitamins A, C, B group vitamins, and minerals like phosphorus, magnesium supporting the health of the nervous and muscular systems, potassium, and iron.
Spelt is also low in calories with about 340 kcal per 100 grams.
Apart from people with celiac disease and those with colitis, spelt pasta is recommended for everyone, especially diabetics, pregnant women, those suffering from constipation, and those following a low-calorie diet.

Ingredients

  • 8.8 oz tagliatelle (spelt)
  • 1 lb radicchio
  • 6.3 oz bacon
  • 2 cloves garlic
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF THE RECIPE OF SPELT TAGLIATELLE WITH RADICCHIO AND BACON

  • First, since the preparation of the sauce is quick, I put a saucepan on the flame to boil the pasta with salt.

    I cut the bacon into cubes or strips and brown them in a pan with 1 tablespoon of extra virgin olive oil.

  • I wash and then pat dry the radicchio and cut it into medium-sized strips.

  • When the bacon is browned, I remove it from the pan setting it aside and then add the garlic and radicchio strips to the pan, letting everything flavor for a few minutes, and seasoning with salt and pepper.

  • In the meantime, I’ve already thrown the spelt tagliatelle into boiling salted water and cook them.

  • Once the spelt tagliatelle are cooked, I drain them while keeping a ladle of cooking water.

  • I put the spelt pasta into the pan with the radicchio, adding a little EVO oil, the crispy bacon, and toss the ingredients, adding if desired, some grated Grana or Parmesan cheese.

  • Here’s this first course with spelt tagliatelle with radicchio and bacon ready!
