Ingredients for SPICY COLD SPAGHETTI WITH BOTTARGA
- 12 oz spaghetti
- 1 clove garlic
- 1 fresh chili pepper
- 2 unwaxed lemons
- 3 tbsps mullet bottarga
- to taste Parsley
- to taste Extra virgin olive oil
- to taste salt and pepper

PREPARATION OF SPICY COLD SPAGHETTI WITH BOTTARGA
In a pan, lightly sauté the garlic clove with parsley and chili pepper in a little extra virgin olive oil.
Meanwhile, cook your preferred long pasta like spaghetti, bucatini, or linguine as usual!
Drain it al dente and then pour it into the pan, adding mullet bottarga too, and toss the pasta to blend everything well.
Let it rest for a couple of minutes to allow the flavors to blend well.
Now, with a fork and a small ladle, create small nests and place them in single-serving glasses.
We are now ready to serve everything with chopped parsley and a bit of grated zest from organic or unwaxed lemons.

SHALL WE COOK SOME SPAGHETTI??? A phrase perhaps a bit overused, but it refers to this long pasta, so beloved and consumed in our country and which pairs wonderfully with many delicious sauces. Bottarga can be either tuna or mullet, and the two products differ in color.
