With the spicy lupini sauce, I thought of making a sort of hummus believing it would be creamy, but by using only lupini and not adding chickpeas or a half-boiled potato, it remained quite grainy, alas!
The taste is pleasant; I added chili pepper, turmeric, and paprika, along with a pinch of pepper and salt, completing a small buffet of savory appetizers prepared a few days ago.
I must point out that I didn’t include the whole lupini left when I took the photo because I’m very fond of them and, as soon as I see them, there’s none left!
The LUPINI I used are in brine, and for me, they are an appetizer, a snack, not a real food, at least until today, because after doing some research online, I discovered that nutritionally speaking, the lupini have a notable content of nutrients like proteins, vitamins, iron, and much more. Being gluten-free, they are also suitable for those with gluten allergies or celiac disease.
I also found out that lupini can be allergenic foods, so they should be consumed with particular attention by people with food sensitivity.
WITH LUPINI, you can also prepare vegan patties and soups, often combined with chickpeas or potatoes, especially for medallion or patty recipes because these additions provide a soft and excellent creaminess.
LUPINI are cereals, a low-calorie food (only 119 kcal per 100 grams of product), and the latest studies have specified that the soluble fiber, of which they are rich, helps reduce glycemic peaks and slow down the absorption of carbohydrates.
The good content of calcium and phosphorus makes LUPINI important for strengthening the bones of growing children and adolescents, but they are also important for postmenopausal women to prevent osteoporosis.
There are different varieties of LUPINI:
1) SWEET LUPINI FROM GROSSETO;
2) POLLINO LUPINI;
3) GIANT LUPINI FROM VAIRANO;
4) VILLOUS LUPINI FROM ANTERIVO;
5) TARWI LUPINI.
CONTRAINDICATIONS TO THE CONSUMPTION OF LUPINI
If we eat too many… they can have an unpleasant laxative effect!

- 4.6 oz lupini (in brine, shelled, rinsed)
- 2 tbsp lemon juice
- to taste ground turmeric
- to taste paprika
- 1 pinch chili pepper
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
1) Maximum speed for this hummus and so….
2) I open the package of lupini in brine, rinse them under running water, then put them in the electric mixer bowl.
3) I add the lemon juice, favorite spices, a drizzle of EVO oil, and turn on the mixer.
4) I taste and try to balance the flavor by adjusting salt and pepper. If you want a less caloric sauce, add a little water along with the vegetable fat.
5) Turn on everything until you have a grainy and flavorful sauce that, placed in a bowl and well covered with plastic wrap, will be stored in the refrigerator until it’s time to serve.
