Strawberry Christmas Yule Log

in ,

A strawberry Christmas yule log — a dessert with strawberries inside and strawberries decorated like little Santas to bring to the table at Christmas (and, without the little Santas, suitable for other times of the year).

The cream filling is simple and no-bake, but you could also use a lemon-flavored cream which goes very well with strawberries, or mascarpone, or a mascarpone and white chocolate cream as shown below.

I didn’t take photos during the recipe preparation for the Christmas dessert but it’s not too complicated…

Preparation for STRAWBERRY CHRISTMAS YULE LOG

  • I make the filling cream by mixing in a regular bowl or in the stand mixer the mascarpone, the cream cheese and the powdered sugar.

The mixture will be pliable and firm; if you prefer it softer, you can replace the cream cheese with the same weight of heavy cream and still beat everything together.

  • I leave the cream in the refrigerator covered with plastic wrap and begin to soak and line the loaf pan (about 12 inches).

In a deep soup plate I pour some milk and, without soaking them too much, quickly dip the ladyfinger biscuits in the liquid and proceed to line the pan.

My pan has a removable silicone rectangle that allows me not to line the container, but if yours doesn’t, I recommend lining the loaf pan with plastic wrap to make it easier to remove the strawberry yule log.

  • Once the ladyfingers are placed in the pan I add a little cream on the bottom and then arrange a row of strawberries, touching each other, along the entire length of the loaf pan.

Then I pipe all the cream for the strawberry yule log using a piping bag, covering everything and reaching clearly up to the top edge.

I level everything, cover with plastic wrap and put in the refrigerator for at least a couple of hours.

  • Now comes the fun part!!!

About 10 minutes before serving the strawberry yule log I prepare the little Santa strawberries: I cut a small piece from a washed strawberry near the stem and shape the tip at the top.

I take the small strawberry piece, make a tuft of cream on top, add the little eyes with chocolate chips, place the hat and make a pompom using the white cream as well.

  • I place my strawberry yule log on the serving tray, remove the plastic wrap if used, and arrange the strawberry Santa decorations down the center of the log, placing them on a little cream that will act as a pedestal and keep the decorated strawberries standing.

    Ready to taste??????
