A strawberry log is a dessert with strawberries inside and strawberries decorated like Santa Claus to serve at Christmas and without the little Santas, even at other times of the year.

The cream is simple and no-cook, but we could also use a lemon-flavored cream, which goes very well with strawberries, or mascarpone, or a mascarpone and white chocolate cream like this ↓

I didn’t take photos during the preparation of the recipe, but it’s not too complicated…

INGREDIENTS FOR THE STRAWBERRY LOG RECIPE

  • 2 cups mascarpone
  • 7 oz cream cheese
  • 1.5 cups powdered sugar (plus a little extra for sprinkling on the strawberry Santas)
  • 1 package ladyfingers
  • to taste milk
  • to taste strawberries
  • to taste chocolate chips (to make the eyes)
  • to taste mint

PREPARATION FOR THE STRAWBERRY LOG RECIPE

  • I make the filling cream by mixing in a classic bowl or in the stand mixer the mascarpone, the cream cheese, and the powdered sugar.

    The mixture will be malleable and firm, and if you prefer it softer, instead of the cream cheese, you can use the same weight of whipping cream and still whip everything together.

  • I leave the cream in the fridge covered with the appropriate film and begin to soak and line the about 12 inches loaf mold.

    In a deep soup plate I put some milk and, without soaking them too much, quickly pass the ladyfingers in the liquid and proceed to line the mold.

    My mold is equipped with a removable silicone rectangle that allows me not to line the container, but if yours is not, I recommend lining the loaf pan with transparent plastic wrap to facilitate the extraction of the strawberry log.

  • Once the ladyfingers are in the mold, I add a little cream to the bottom and then make a row of strawberries joined one to another along the entire length of the loaf pan.

    Then I put all the cream for the strawberry log using the piping bag and covering everything, clearly up to the top edge.

    I level everything, cover with food wrap, and place it in the fridge for at least a couple of hours.

  • Now comes the fun part!!!

    10 minutes before tasting the strawberry log, I prepare the little Santas, so I cut a piece of washed strawberry near the stem and the tip upwards.

    I take the piece of strawberry, make a cream tuft on top, add the chocolate chip eyes, put the hat on, and make a pompom, always using the white cream.

  • I place my strawberry log on the serving platter, remove the wrap if I used it, and place the strawberry Santas in the middle of the log, positioning them on a little bit of cream that will serve as a pedestal and keep the dressed strawberries as Santa Claus in place.

    Ready for tasting??????
