It’s an idea we can prepare in advance and keep covered with cling film in the refrigerator until it’s time to taste our entry finger foods.

The cottage cheese made from skimmed milk and cream is often used for a healthy and balanced diet, and in this easy recipe, it pairs beautifully with the savory taste of bresaola.

STUFFED BRESAOLA CONES RECIPE INGREDIENTS

  • 7 oz cottage cheese
  • 1 tomato (seedless core and diced)
  • 1/2 fennel (diced)
  • 5 oz bresaola
  • to taste parsley (or basil or arugula)
  • to taste salt
  • to taste extra virgin olive oil

HOW TO PREPARE THE STUFFED BRESAOLA CONES RECIPE

  • I present to you a non-recipe, a quick idea to set up a new preparation to expand the appetizer buffet for all our lunches/dinners, not just for the END OF YEAR HOLIDAY season!

  • So… I remove the tougher parts of the fennel and after washing it, I dice it into rather small pieces.

  • I wash the tomato, remove the internal seeds and the harder core (which I can maybe add to a new seasoning), and also dice this vegetable into small cubes in a fine brunoise.

  • In a bowl, I place the freshly prepared vegetables and also add the cottage cheese, mixing everything well.

  • I also add a little freshly chopped parsley and season the bresaola cone filling with just a dash of olive oil, salt, and pepper.

  • I stuff each bresaola slice with a bit of this mixture, roll into a cone, and secure with a toothpick or as desired.

    I place each appetizer on a dish or tray and serve!
