Stuffed Grilled Eggplants today a tasty and cheesy dish that’s also quick if you use pre-grilled vegetables and delicious even cold! Eggplants are a typical summer vegetable that must be consumed cooked because they contain solanine, which, if ingested in large quantities, is toxic. There are many varieties of eggplants with different shapes and colors like long, round, elongated, dark, light, and white.
These last ones have a more delicate flavor excellent for grilling, while the dark purple ones have a very strong aroma and are great for preparing tasty sauces and condiments.

Stuffed Grilled Eggplants

Ingredients RECIPE STUFFED GRILLED EGGPLANTS
- 1 lb eggplants
- 10.5 oz mozzarella
- 1 cup fresh tomatoes (I used perini)
- as needed basil
- as needed Extra virgin olive oil
- as needed salt and pepper
- as needed Parmigiano Reggiano (grated)

FOR THE PREPARATION OF THE RECIPE STUFFED GRILLED EGGPLANTS
Dice the mozzarella and place it with plenty of chopped basil in a bowl.
Wash and chop the fresh tomatoes.
For the perini tomatoes I had, I removed the core and seeds.
Once chopped, combine them with the rest and season with a pinch of salt and pepper.
Wash and trim the eggplants and slice them into medium-thick slices.
On a hot grill, cook them on both sides and then let the cooked slices cool.
Stuff them with the mozzarella, tomato, and basil mixture by rolling them like a roll.
Place them in an oven dish, sprinkle the stuffed grilled eggplants with grated Parmigiano Reggiano and the remaining mixture used for stuffing.
Add more basil, drizzle the rolls with a little EVO oil and bake in a preheated oven at 350/375°F for 7/8 minutes or depending on your appliance’s characteristics.
Once cooked, let them warm slightly and… enjoy them to the fullest! Bon appétit with the stuffed grilled eggplants!!
