A simple appetizer, these stuffed omelette rolls can be varied according to our tastes and dietary needs.
The omelette I flavored with a little Genoese pesto, but you can omit it if not preferred and maybe add a nice chop of finely chopped fresh parsley, basil, or chives.
Rolls, rolls, roll-ups basically are different names for small bites that can be appetizers, main courses, or sides and can be a tasty dish for a well-garnished and varied buffet.

Ingredients for STUFFED OMELETTE ROLLS
- 4 eggs
- 1 teaspoon pesto or tapenade
- 4 slices cooked ham
- as needed mascarpone or robiola or Philadelphia
- 5 sprigs chives (5/6 be gentle as they break quickly)
- 2 tablespoons extra virgin olive oil
- as needed salt
- as needed pepper

FOR THE PREPARATION OF STUFFED OMELETTE ROLLS
Firstly, I beat the eggs to which I added Genoese pesto and a pinch of salt and pepper.
I let a bit of oil warm in a large pan and then pour in the eggs flavored with pesto and let it cook for 3/4 minutes, then flipping the omelette and doing the same but more quickly on the other side.
I let the omelette slide onto a cutting board and let it cool.
I spread the chosen creamy cheese, robiola, mascarpone, or spreadable cheese over the omelette and roll it up like a roll.
I place the cooked ham slices on cling film close together and put the stuffed omelette roll on top.
I roll everything up tightly, twist the ends like a candy, and place it in the refrigerator until mealtime.
I now slice the roll into pieces about 1 1/4 inches (3 cm) thick and seal them with a chive sprig or perhaps a toothpick, maybe decorated like these
