Ingredients STUFFED SHELLS RECIPE WITH 3 CHEESES
- 20 jumbo shells (for me Rummo jumbo shells n°147)
- 1 cup cups ricotta
- 7 oz oz mozzarella (cubed)
- 3 tbsps grana padano (grated)
- 11 oz oz Agromonte tomato preserve (for me cherry tomato)
- 1 tbsp extra virgin olive oil
- as needed basil (fresh)
- 1 clove garlic
- as needed salt and pepper

FOR THE PREPARATION OF THE STUFFED SHELLS RECIPE WITH 3 CHEESES
First, let’s put a saucepan with salted water on the stove, and when it boils, we add the jumbo shells, drain them al dente and place them under the jet of cold running water for a few seconds.
In the meantime, let’s prepare the tomato sauce …
In a small pan, put the EVO oil and the crushed garlic clove, allowing it to brown, then remove it.
Pour in the Agromonte cherry tomato preserve, a few fresh basil leaves, and let everything slowly gain flavor for about 10 minutes.
For the filling, roughly chop the mozzarella. I used a braid of cow’s milk mozzarella.
Pour the ricotta and the chopped mozzarella into a bowl.
Also add the grated cheese and season with salt and pepper.
Mix everything together and for convenience, put it into a piping bag.
Once the al dente cooked shells have cooled, let’s fill them with the 3 cheese filling and arrange them in the baking dish with the bottom just covered with cherry tomato sauce.
Place them neatly, adding more grana and drizzling with the remaining tomato dressing.
Insert some more basil here and there and bake in a preheated oven at 375°F for about 20/25 minutes or according to the characteristics of your appliance.
Once done (if you want, spend the last minutes with the dish in grill mode), let it cool for 5 minutes and serve this simple, economical, and very tasty dish!
